“I discovered a drinks producer from Iceland and got them to send me some samples of their birch-flavoured liqueur, birch eau de vie and birch bitters. I had the idea of combining three variations of one flavour and then putting them back together so that it becomes more than the sum of its parts. Max and I finalise the twig garnish – we are hoping it is implicit not to gnaw it.”
